If you are like us at Giolitti Deli, you love all kinds of pasta!  Sometimes it can be challenging deciding what sauce to pair with which type of noodle. First, decide what kind of sauce you will be using. While any pasta and sauce combination is acceptable, there are ways in which specific noodles can enhance the flavor of your sauce.

Tube Pasta

Tubular pasta shapes such as penne, pennoni, rigatoni, or ziti are perfect for hearty, thick, or meaty sauces. Rigate means the pasta is ridged on the outside, which helps capture even more sauce in each bite.  

Ribbon Pasta

This pasta type includes broad, flat noodles like pappardelle, tagliatelle, manfredine, and fettuccine. These are ideal for creamy sauces, and the wider the noodle, the heavier sauce it can support.

Rod Pasta

Long, round pasta like capellini and spaghetti are extra tasty with olive oil– and tomato-based sauces. Thinner sauces coat the small, round strands more evenly.   A fun alternative to these common kinds of pasta is bucatini and perciatelli.  These varieties have a tiny hole in the middle of the noodle, allowing sauces to seep inside! 

Shaped Pasta

Many short types of pasta have unique shapes and lots of crevices in which to trap sauce.  They also go well with chunky vegetable or meat sauces.  Shell, orecchiette, cavatappi, and Gemelli are some of our most popular shapes.  Or try unusual and fun types such as Gigli, garganelli, and trofie!

Gluten-Free Pasta

We carry a variety of gluten-free pasta: whole rice, corn, corn/rice blend, red lentil, chickpea, and black bean pasta.  We also have corn/rice lasagna noodles!
