This week’s featured cheese from Giolitti Deli is the Cotswold Double Gloucester blended with onion and chives. Double Gloucester is a pale orange, cheddar-type cheese that can be found in its pure state, but it’s best known in the U.S. as the orange stripes layered with blue Stilton in Huntsman cheese, or blended with dehydrated onion and chives to make pub cheese, known as Cotswold.
