La Colomba di Pasqua, or “the Easter dove,” is a sweet Italian cake that is served on Easter and represents the start of spring. The cake can be thought of as the counterpart of the classic Christmas cakes panettone and pandoro, and is found on every Italian family’s table on Easter. This week’s featured cheese from Giolitti Deli is the Cotswold Double Gloucester blended with onion and chives. Double Gloucester is a pale orange, cheddar-type cheese that can be found in its pure state, but it’s best known in the U.S. as the orange stripes layered with blue Stilton in Huntsman cheese, or blended with dehydrated onion and chives to make pub cheese, known as Cotswold. The muffuletta is both a type of Sicilian bread and a popular sandwich that originated in New Orleans. At Giolitti Deli, we sell our version of the classic sandwich, made with Genoa salami, Capicola, provolone, house dressing, and homemade olive mix in the end of a scooped out Italian Tuscan loaf for $9.95.
