Iberico chorizo and salami are delicious cured meats from black Iberian pigs that live in the Dehesa of Spain. A Dehesa is a cultural landscape of southern and central Spain and southern Portugal, and the land is often used to raise free-range domestic pigs. These pigs are used to make the dry-cured sausage. Iberian Pigs

Iberian pigs can only be found in Spain, and spend their lives exploring the ancient Dehesa rangelands in small family groups. In the fall season, they eat sweet “bellotas,” or acorns, and have a happy life freely wandering the lands. Their life of exercise and an excellent diet is what makes Iberico pork the finest pork in the world!

Chorizo

Iberico chorizo is a dry-cured sausage that has been flavored with garlic and smoked paprika. The meat is mixed with spices and cured for over 60 days, resulting in a firm, but sliceable chorizo with lots of delicious flavors. The chorizo is best when sliced as thinly as possible and served at room temperature, but can be stored in a cool, dry place for up to a week after opening. The meat can be eaten on its own, and is best when paired with a glass of Spanish wine. To make a classic bocadillo sandwich, layer thin slices of chorizo on half of a loaf of rustic bread. Top with a drizzle of extra-virgin olive oil, and enjoy the simple, delectable sandwich!

Salami

Salami, or salame in Italian, is also a type of sausage made from Iberian pigs, but unlike Iberico chorizo, the meat is not seasoned with smoked paprika. Instead, it is only seasoned with sea salt and black pepper to allow the pure Iberico pork flavors to shine in every bite! The meat is hung to cure in cool, fresh air for several weeks before it’s ready to be served. The salami does not need any refrigeration or cooking, but is ready to be served after slicing. As with the chorizo, it is delicious on its own, especially when paired with a crisp white wine from Spain.
