This week’s recipe is a classic Roman dish that is delicious, but extremely simple and quick to make on your own! To make spaghetti a cacio e pepe, or spaghetti with cheese and pepper, you will only need four ingredients- pasta, pepper, olive oil, and cheese, and about 15 minutes of your time.

Giolitti’s Spaghetti a Cacio e Pepe Recipe

For Giolitti’s recipe, you will need:

  • ½ lb imported spaghetti
  • 1-2 tablespoons freshly ground black pepper (depending on your taste)
  • 3 tablespoons of Extra Virgin Olive Oil
  • ½ cup freshly grated imported Pecorino Romano cheese

Start by bringing salted water to a boil. You can use a pot, but cooking the pasta in a skillet helps concentrate the starch in the water and makes the sauce smoother.

Cook the spaghetti to al dente, then drain after reserving one cup of the cooking water. Toss the spaghetti with olive oil, pepper, and the Romano cheese, adding enough of the pasta water to make a sauce. The cheese and starch from the cooking water make a sauce so creamy that you don’t need to add butter or cream!

Another tip: grating the cheese very finely instead of shredding helps it incorporate into the dish smoothly and melt properly. Once the dish is done, serve immediately (½ lb of spaghetti serves about 2-3 people) and enjoy!
