Giolitti Deli won the Maryland Seafood People’s Choice Awards a few years ago with our recipe, and have kept it on the menu by popular demand ever since. Crab Meat

Marylanders know that you can’t just buy authentic Maryland-style crab soup off the shelf, as a can will never compare to homemade soup. To get the distinct flavors, you need to make the soup from scratch! The crab meat is one of the most important parts of the soup, and using fresh crab meat is always preferred. When you can’t get fresh crabs, look for picked and packed crab instead. If all else fails, you can buy canned- but remember to look in the seafood section of your grocer or seafood market rather than on the shelf.


Authentic Maryland crab soup incorporates a combination of celery, carrots, onion, potatoes, tomatoes, and corn. Additional vegetables include lima beans, peas, and green beans, but adding other vegetables is straying away from the traditional soup. However, some people in Baltimore choose to add cabbage as well.


It wouldn’t be a Maryland soup without Old Bay! This soup requires a good amount of Old Bay seasoning to bring out the delicious flavors in the crab. Real Maryland crab soup is also heavy on the pepper, as well as sea salt to taste. Other ingredients include fresh parsley, bay leaves, beef broth, and water.
