How To Make Porchetta

Porchetta is a savory, boneless pork roast that originated in central Italy. The preparation and cooking process takes around two days, as the meat is traditionally roasted over wood for over 8 hours. The original Italian cut of meat is the pork belly, including the pork loin. The first step is to cut off the skin as close as possible, then save it for later to wrap the porchetta as it cooks. The roast is then heavily salted and stuffed with many herbs, including rosemary, fennel, sage, thyme, salt, pepper, and garlic. Once the porchetta is cut, the spices must be rubbed into the meat to get as much flavor as possible.

Next, roll up the pork belly tightly with the skin on the outside to create a round form, then use a skewer to keep it together. The porchetta is then sewed up with a butchers thread and needle to ensure it stays tight as it cooks. An important step is to puncture the skin with a sharp knife, as the heat can cause the skin to burst and it allows the fat to come out. It is then ready for cooking!

Giolitti Deli’s porchetta sandwich is made with Italian seasoned roasted pork with melted fontina cheese, caramelized onion, and rapini (or broccoli rabe) on a crispy Italian baguette. Try it today for $7.95 for half a sandwich or $9.95 for a whole sandwich.

In addition to the house favorites, we also offer the option to make your own sandwich by choosing your bread, meat, cheese, condiments, and additional items like roasted red peppers or olive mix.
