Gnocchi With Beetroot
Have you ever had beetroot gnocchi? If not, now is the time to try it! Red beetroot is an excellent source of fiber, potassium, and vitamin C. The vegetable is also low-calorie, with only 43 calories per 100 grams. Red beetroot is also low in carbohydrates and a very low glycemic load, meaning that eating the vegetable doesn’t greatly alter your glycemic levels.
Potato gnocchi is a classic Italian meal, often passed down from generations. Mamma Emma’s potato gnocchi is the same flavor as their Italian grandmother’s recipe and are hand-made with the same velvety taste of gnocchi that we know and love!
Mini Potato Gnocchi With Pesto Recipe
At Giolitti Deli, we sell regular and mini potato gnocchi, which make the perfect summer dinner! Follow Mamma Emma’s recipe on how to make a delicious potato gnocchi dinner at home:
- 7 oz Mini Gnocchi
- 20 basil leaves
- ½ garlic clove
- 2 dl* extra virgin olive oil
- 10 grams (2.3 teaspoons) pine nuts
- ½ lemon
- 4 teaspoons aged pecorino
*2 deciliters converts to 13.5 tablespoons or .8 cups
Toast the pine nuts and crush them together with the basil leaves, a pinch of salt, crushed pepper, garlic, and extra virgin olive oil. Pour the sauce in a pan with half a glass of water, and as soon as it is hot, add the gnocchi. Toss gently in the pan for about 2 to 3 minutes. Dress the gnocchi with pesto, a dusting of pecorino cheese, a drop of oil, and enjoy!
